📝 Ingredients:
For the Herb Butter Chicken:
2 bone-in, skin-on chicken thighs
2 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
1 tsp dried thyme
1 tsp dried parsley
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chicken broth
For the Roasted Carrots:
4 large carrots, peeled and halved
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp dried thyme
For the Creamy Mashed Potatoes:
3 large potatoes, peeled and cubed
2 tbsp butter
1/2 cup heavy cream
1/4 cup sour cream
Salt & black pepper, to taste
For Garnish:
Fresh parsley
🍽️ Step by Step:
1️⃣ Roast the Carrots:
Preheat oven to 400°F (200°C).
Toss carrots with olive oil, salt, pepper, garlic powder, and thyme.
Roast for 25-30 minutes until tender.
2️⃣ Make the Mashed Potatoes:
Boil potatoes in salted water until fork-tender (about 15 minutes).
Drain and mash with butter, heavy cream, and sour cream.
Season with salt and pepper.
3️⃣ Cook the Herb Butter Chicken:
Heat olive oil in a pan over medium heat.
Season chicken with salt, pepper, paprika, thyme, and parsley.
Sear chicken skin-side down for 4-5 minutes until golden.
Flip, add butter and garlic, and cook another 4 minutes.
Pour in chicken broth, cover, and simmer for 10 minutes until cooked through.
4️⃣ Assemble & Serve:
Plate the mashed potatoes, top with herb butter chicken, and drizzle pan sauce over it.
Serve with roasted carrots and garnish with fresh parsley.
