A refreshing, vibrant, and nutrient-packed salad bursting with tropical flavors!
📝 Ingredients:
1 ripe mango, diced
1 avocado, diced
1 cup cherry tomatoes, halved
1/2 cup black beans, rinsed and drained
1/2 cup grilled corn kernels
1/4 red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
For the Dressing:
2 tbsp olive oil
1 tbsp lime juice
1 tsp honey (or maple syrup)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp cumin (optional)
🍽️ Step by Step:
1️⃣ Prepare the Ingredients:
Dice the mango, avocado, and cherry tomatoes.
Rinse and drain the black beans.
Grill or roast the corn, then cut the kernels off the cob.
2️⃣ Make the Dressing:
In a small bowl, whisk together olive oil, lime juice, honey, salt, black pepper, and cumin.
3️⃣ Assemble the Salad:
In a large bowl, combine mango, avocado, tomatoes, black beans, corn, red onion, and cilantro.
